Ascorbic Acid Powder A water soluble powder obtained from plant mucilage (Cyanopis tetragonoloba). What does Guar Gum do? Guar is a white free flowing powder. Completely soluble in hot or cold water to form a tasteless, odorless non toxic solution. Guar gum powder has 5-8 times the thickening power of starch. Mainly used in pharmaceuticals – binder in tablet mixtures, thickener and emulsifier in food products eg cheese spreads, ice cream and other frozen deserts. The water soluble portion, 85%, is called guaran and consists of 35% galactose, 63% manose and 5-7% protein.
