Sorbic Acid and Potassium Sorbate are very effective and safe antimicrobial food grade preservatives. At very low levels they effectively inhibit the growth of mould, yeast and many food spoiling bacteria. Sorbic Acid and Potassium Sorbate may be used over a wide range of pH. Sorbistat K40 is 40% w/v stabilised solution of Potassium Sorbate. It provides an ideal and convenient method of incorporating the low levels of Sorbate required for protection of food and beverages against microbial spoilage. Applications include cheese and cheese products, soft drinks, cordials, fruit juices, wine and baked goods.
